Sorry to be so daft, but I'd like to upload one of my own images to the gift certificate profiles to use as the background for my gift certificates. How do I do that?

There is no user interface to do this, but you can upload images in jpg or png format through ftp into www/administrator/components/com_awocoupon/assets/giftcert/images/
Once there, it will automatically be picked up by AwoCoupon.
