Can the format of the random generated coupon and gift certificate codes be controlled in any way? For example, is there a way to restrict its length and make the code all uppercase alpha characters?

Not within the interface, but you can within the code. It is controlled in www/administrator/components/com_awocoupon/helpers/awolibrary.php, line 411 function generate_coupon_code
