Customizing the auto-generate coupon code output

I have a question on the auto generate coupon code. Is it possible that we could specify length (16 characters) and stick with alpha-numeric (non case sensitive) codes to make it easier to redeem them.

There is no interface for that, you would need to edit the code to change it.
